    北京乱炖和火腿年糕烩豆腐

    把水做开了,放上点儿粉丝,再把冰箱里的剩饺子OR剩烙饼AND各色剩菜一股脑倒进锅里,开锅之后连干的带汤一起盛到大碗里,放上火锅调料再放上辣椒油和孜然粉,这样的折罗就是豌豆近期的伙食,美其名曰:“北京乱炖”!很省事,最大的优点就是无论上顿剩下什么东西都能趁这个机会消灭掉而不以为苦……

    但就算是穷人到底也不能天天吃折罗啊,于是今天晚上下厨房做了这道“火腿年糕烩豆腐”,有我最爱吃的豆腐,也满足无肉不欢的饮食习惯,并且连主食都一并交代了——年糕好美味!一盘菜就是一顿饭,是我作为穷人兼懒人的生活状态,不过真的很好吃哈!:)

      豆腐两面去皮,每块切成十六片,晾干,用猪油熬,清烟起才下豆腐,略洒盐花一撮,翻身后,用好甜酒一茶杯,大虾米一百二十个;如无大虾米,用小虾米三百个;先将虾米滚泡一个时辰,秋油一小杯,再滚一回,加糖一提,再滚一回,用细葱半寸许长,一百二十段,缓缓起锅。

      杨中丞豆腐
      用嫩豆腐,煮去豆气,入鸡汤,同鳗鱼片滚数刻,加糟油、香等起锅。鸡汁须浓,鱼片要薄。

      张情豆腐
      将虾米捣碎,入豆腐中,起油锅,加作料子炒。

      庆元豆腐
      将豆鼓一茶杯,水泡烂,人豆腐同炒起锅。

      芙蓉豆腐
      用腐脑,放井水泡三次,去豆气,火鸡汤中滚,起锅时加紫菜、虾肉。

      王太守八宝豆腐
      用嫩片切粉碎,加香草屑、蘑菇屑、松子仁屑、瓜子仁屑、鸡屑、火腿屑,同太浓鸡计中,炒滚起锅。用腐脑亦可。用瓢不用著。孟亭太守云:“此圣祖赐徐健庵尚书方也。尚书取方时,御膳房费一千两。”太守之祖楼村先生,为尚书门生,故得之。

      程立万豆腐
      乾隆甘三年,同金寿门在扬州程立万家食煎豆腐,精绝无双。其腐两面黄干,无丝毫卤汁,微有车螫鲜味。然盘中并无车螫及他杂物也。次日告查宣门,查日:“我能之!我当特请。”已而,同抗董莆同食于查家,则上著大笑;乃纯是鸡、雀脑为之,并非真豆腐,肥腻难耐矣。其费十倍于程,而味远不及也。惜其时余以妹丧急归,不及向程求方。程逾年亡。至今悔之。仍存其名,以俟再访。

      冻豆腐
      将豆腐冻一夜,切方块,滚去豆味,加鸡汤汁、火腿汁、肉汁煨之。上桌时,撤去鸡、火腿之类,单留香草、冬笋。豆腐煨久则松,面起蜂窝,如冻腐矣。故炒腐宜嫩,恨者直老。家致华分司,用蘑菇煮豆腐,虽夏月亦照冻腐之法,甚佳。切不可加荤汤,致失清味。

      虾油豆腐
      取陈虾油,代清酱炒豆腐。须两面漠黄。油锅要热,用猪油、葱、椒。蓬蒿菜
      取蒿尖,用油例瘪,放鸡汤中滚之,起时加松菌百枚。
